Jon -- the best source in English is:
James Roberts, Drink, Temperance and the Working Class in
19th-Century Germany, Boston: George Irwin, 1984.
See also the papers by Roberts, Giles and Fahrenkrug in S. Barrows &
R. Room, eds., Drinking: Behavior and Belief in Modern History, Berkeley:
UCPress, 1991, and the references on pp. 434-435 of Jeffrey Verhey's
bibliographic essay therein.
There's a fair amount of recent stuff in German. See:
Hasso Spode, Die Macht der Trunkenheit: Kultur- und
Sozialgeschichte des Alkohols in Deutschland, Opladen: Leske &
Budrich, 1993.
      Irmgard Eisenbach-Stangl, Eine Gesellschaftsgeschichte des
Alkohols: Produktion, Konsum und soziale Kontrolle alkoholischer
Rausch- und Genussmittel in Oesterreich 1918-1984, Frankfurt/Main:
Campus, 1991.

What might be the standard histories of drinking and temperance of
nineteenth- and early twentieth-century Germany?

Any suggestions would be appreciated.

Thank you,
