Regarding Southern cities,prohibition, and Catholicism, you may wish to
take a look at "Anti-Alcohol City: Social, Economic, and Political Aspects
of Knoxville, Tennessee, 1870-1907" by Roger Dale Posey. It is an M.A.
thesis that I came across while researching the Knoxville Progressive Era
Catholic community. It may be useful, although it does fail to take into
account ethnic and religious differences regarding Knoxville's 1907
prohibition vote, focusing instead upon race (black vs. white). The
aforementioned thesis can be obtained from Hodges Library at University of
Tennessee, Knoxville.
